Epidemiological evidence demonstrates that diets rich in fruits, vegetables, and whole grains are consistently associated with a decreased risk of chronic degenerative disease. Through the chemical assessment of food groups, it has become apparent that the health benefits afforded by diets high in fruits, vegetables and whole grains cannot be explained solely on the basis of nutrient content. Rather, many researchers have correlated specific groups of phytochemicals with the decreased incidence of many chronic degenerative disease states. The focus of current scientific investigations in the field of phytochemistry center on the unique mechanisms of action associated with beneficial phytochemical groups and their role in the promotion of optimal health. This conference will include research presentations that focus on the identification, pharmacokinetics and biotechnology of a variety of phytochemicals as found in the Vaccinium species, tropical fruits, oilseeds, broccoli, echinacea and soy. Featuring an international panel of recognized phytochemistry experts, this conference will present fascinating insights into the bioactive roles of phytochemicals in health promotion and the impactful future of this important group of plant compounds. |
